We use over 14 different bush herbs, spices, fruits and foods in our cooking, including bush tomato, lemon myrtle, mountain forest berries and rosella
Entrees: Northern Territory Style: A Taster plate of a selection of 3 of Barramundi, Camel, Buffalo, Crocodile, Kangaroo
Mains: Leg of Lamb / Roast Beef or Roast pork,(cooked in native spices) Coal Roasted Vegetables,
Tomato and Onion Pie, and Peas (in native mint)
"Flash Dampers" with a cheese top (using bush herbs or spices)
Deserts: Gem Scones (with native jams), and maybe NT Desert Rose, sometimes even a camp oven Pavlova
Gum Leaf Billy Tea (spun 3 times)
Billy Spinning Competition for kids (and BIG kids too)
