Our aim this year is to show our guests a wonderful marriage of white and Indigenous cultures, through our delicious food, flavoured from our native bush. We want to send your taste buds on a wild ride for the night, so don't miss it!
Find us on the Gorge Road at Katherine's Top Didj Cultural Experience grounds, in their gate and follow the solar lights and dirt road to end of property. Our 1920 Camp night is a Traditional Stockman's Dinner/Show, and a Tribute to all Australia's Camp Oven Outback Cooks who came before us.... Let us take you back 100 years, and "live" a bit of history.
Using only the best Beef, and Organic vegetables, our Stew and Dampers are flavoured with Native Bush fruits, foods, herbs and spices, for a taste sensation. Dine under the stars, around the campfire, with your hostess-with-the-mostess, Penny, who will look after you, while you enjoy Marksie's wild, outrageous, true and not-so-true stories, and some even a little bawdy. What's that? - don't let the truth get in the way of a good story? Ask him about emu nests! Marksie says he is our own Hugh Jackman look alike? (Hope Hugh turns up so we can check)
The campsite is reminiscent of a Stockman's Camp complete with bush sounds and free roaming wildlife. Sit back and enjoy the huge, star-filled sky, and share a few yarns while you sip your billy tea.

What an amazing night!
The food was to die for but those scones were like heaven! Such a warm welcome when I got there too, for a solo traveller you made me feel right at home and like part of the family. A delicious dinner under the stars accompanied by some hilarious tales what more could you want from life! Marksie, Penny and the girls were so lovely and accommodating, I honestly can’t fault the night. Thanks so much guys, I take my hat off to all of you. I recently spent 6 months touring Australia. Of all the wonderful memories the evening I spent with Marksie and Penny is one of the best! Sitting near the fire under the amazing Katherine stars, holding a baby wallaby in my arms, hearing fascinating stories and eating the best stew I ever tasted made for an unforgettable evening. This was a first class night
This was a first class night out! Food was great, Marksie was very entertaining and the whole night moved along well. I was surprised when the night ended and I realized how late it was. I enjoyed the show and felt pleased to know that overseas visitors would get such an authentic, well organized Australian bush tucker experience. Grant, August 2020
I will always remember the evening in Marksie's camp as one of the most exciting in my life. The atmosphere was so wonderful! Fire, interesting stories and kangaroos bouncing around. And traditional Australian food was just amazing! A very Australian experience. Thank you Marksie and your team for hospitality and this beautiful evening.

Stockman Bush Tucker fusion in Katherine. My husband and I had a great night listening to Marksie’s stories and chatting with other tourists and locals at Marksie’s Camp Tucker Night. I loved Marksie and his wife Penny’s passion for the local community and their commitment to tribute to both traditional aboriginal culture and Australian Stockman history. Plus the food was delicious - a modern take on Stockman’s beef and veggie stew with a mix of bush herbs and spices, and a roast wattleseed (spices are hand-collected!) damper that has changed my memories of damper. Throw in a billie spinning competition and it makes for a memorable night in the Northern Territory! We haven’t come across anything else like it in the NT - it’s well worth a visit if you’re in Katherine during the dry season (Apr-Oct). Courtney, NSW April 2019
Hosts, Penny and Geoff made us all feel immediately welcome around the campfire. The food was so good that my fussy 13 year old boy was keen for seconds and we loved the subtle flavours of the indigenous herbs and spices. Marksie entertained us with fascinating yarns of a stockman's life and the acquisition of the bush tucker knowledge. To be honest I was a bit concerned how our son would react to the evening but he embraced it - he loved the stories, the billy spinning and the resident little wallaby who we fed sweet potato. We had a fantastic evening at Marksie's. The food, the yarns, the service and his knowledge was well worth it. He explained where all the ingredients came from and how he mixed them into what he was presenting for us. He explained how difficult it was to get hold of the information from the indigenous people to be even able to put this all together which was fascinating. We purchased some of the ingredients he had used in the meals and have since added them to our meat and fish with amazing results. This is a must do experience.

My parents and I had a great time at Markies dinner. Penny and Markies are very welcoming and work so hard to slow cook you a lovely dinner. We all local organic ingredients. We were all amazed how much we learnt about all the native herbs. Things we have heard of before. Penny made a gluten free damper and gem scones for me. They tasted amazing. One of the most memorable nights we have had. The food was just perfect in every way. A must to do in Katherine."

Wow. What a great setting for an evening of great tales and camp tucker. The authentic setting ,sitting watching the billy boil and smelling the aromas of the beef stew which had been simmering all day was tantalising. Marksie made you feel welcome from the moment you arrive until it is time to leave (one more story for the road). His Aussie yarns of a Stockman's life were enthralling and hilarious. His team (Penny and 2 high school girls) helped make the night run like clockwork. The damper ..yum . The beef stew ... melted in your mouth . The scones .. to die for. Authentic Outback Experience
Thank you Marksie for such a wonderful, lovely evening! We did the top end loop over the Easter, and out of everything we did and saw this was one of my favourite. Marksie couldn't have been more welcoming and accommodating, and it's so nice to meet people with such a strong passion for what they do. My Dad, brother, husband and myself all LOVED the food - it was seriously delicious, and also learned a lot about the culture. Marksie’s has for me three major selling points which when combined create the perfect outback dinner experience. The first selling point was it’s beautiful location, under a sky fall of stars the camps location, an isolated clearing surrounded on all sides by bush, turns into a magical and beautiful scene which seems like the set of some country movie. The second selling point was the food, the menu was jam packed full of aussie classics and favourites. The courses contained all the necessities cooked in a truly Aussie camp fire, a marriage of both Western and Indigenous cuisine and herbage. The third and arguably most important selling point for me was the atmosphere. An outback setting surrounded the meal spurred on by Marksies witty and engaging humour and topped off by a roaring fire from which many smaller fires sprouted working various camp ovens.
